50 g of chopped sun dried tomatoes in oil
2 tbsp olive oil
1 tbsp red wine vinegar
Directions
Halve the potatoes and roast at 180 degree oven with olive oil and seasoning, until golden crips and cooked through.
Put eggs in a pan of cold water , bring to the boil and simmer for 8-10 minutes (slightly less if you like them soft). Pluge into cold water and peel. Then cut them into halves.

In a large salad bowl whisk together the oil, red wine vinegar, then add capers, finely sliced red onion and chopped tomatoes.
season well and tip in the spincach, flaked tuna, potatoes, green beans and chopped sun dried tomoatoes.
