Ingredients:
- 450g new potatoes
 - 4 eggs
 - 2 tbsp capers
 - 1/2 red onion finely sliced
 - 100g Spinach
 - 2 x 160g Tuna or fresh Tuna
 - large handful of green beans trimmed, halved and blanched.
 - handful of cherry tomatoes
 - 50 g of chopped sun dried tomatoes in oil
 - 2 tbsp olive oil
 - 1 tbsp red wine vinegar
 
Instructions:
- Halve the potatoes and roast at 180 degree oven with olive oil and seasoning, until golden crips and cooked through.
 - Put eggs in a pan of cold water , bring to the boil and simmer for 8-10 minutes (slightly less if you like them soft). Pluge into cold water and peel. Then cut them into halves.
 - trim, half and blanch your green beans in boiling water for 2-3 mins
 - In a large salad bowl whisk together the oil, red wine vinegar, then add capers, finely sliced red onion and chopped tomatoes.
 - season well and tip in the spincach, flaked tuna, potatoes, green beans and chopped sun dried tomoatoes.
 - Eat and enjoy straight away..the perfect lunch!
