Tuna loaded lunch time crackers

Ingredients:

  • 1 can tuna
  • 1 tablespoon natural yoghurt
  • 1 teaspoon dijon mustard
  • 1/3 cucumber finely diced
  • 1 celery finely diced
  • 1 spring onion finely sliced
  • 1 pickled onion sliced
  • herbs if you have them eg chives
  • 3 crackers (I used ryvita..could use rice cakes)
  • 1/2 smashed avocado (optional)

Instructions:

  1. Add all the ingredients together except the avo.
  2. Smash the avocado and spread on the crackers.
  3. Load up the crackers with the tuna mix.
  4. Optional ..sprinkle with herbs.
  5. Enjoy

Notes:

  • Preparation time: 5 mins

I often make double as this is so tasty to dip into for afternoon snacks ..store in an airtight container for up to 3 days.
