Ingredients
- 2 slices sourdough toast
- 100 g frozen peas and spinach
- 1 sliced garlic
- 100ml veg stock
- 1 tbsp sour cream
- 1 can butter beans
- Paremsan for grating
- chilli flakes
Instructions
- Place peas, spinach, garlic, veg stock and sour cream into a blender. Blend until smooth.
- Heat the green mixture in a frying pan for 5 mins until bubbling...taste and season
- Toast your sourdough.
- Add 1 can of butter beans to the sauce. Heat through.
- Spoon beans over the toast, add grated parmesan and chilli flakes.
- Enjoy - you'll make this a lot! You can use the sauce as a delicious dip too!
