Super Greens Beans on Toast

Ingredients

  • 2 slices sourdough toast
  • 100 g frozen peas and spinach
  • 1 sliced garlic
  • 100ml veg stock
  • 1 tbsp sour cream
  • 1 can butter beans
  • Paremsan for grating
  • chilli flakes

Instructions

  1. Place peas, spinach, garlic, veg stock and sour cream into a blender. Blend until smooth.
  2. Heat the green mixture in a frying pan for 5 mins until bubbling...taste and season
  3. Toast your sourdough.
  4. Add 1 can of butter beans to the sauce. Heat through.
  5. Spoon beans over the toast, add grated parmesan and chilli flakes.
  6. Enjoy - you'll make this a lot! You can use the sauce as a delicious dip too!
