Spinach and egg wrap

Ingredients

  • 2 large eggs
  • 1 whole grain or spinach wrap (about 20-25 cm in diameter)
  • 60g fresh spinach (or more if desired)
  • 60g diced tomatoes (optional)
  • 60g shredded cheese (optional, such as feta or cheddar)
  • Salt and pepper to taste
  • 5ml olive oil or cooking spray

Instructions

  1. Prep the spinach: Rinse and dry the spinach leaves.
  2. Cook the eggs: In a small bowl, whisk the eggs with salt and pepper. Heat olive oil in a non-stick skillet over medium heat. Add the spinach and sauté for about 1-2 minutes until wilted. Pour in the eggs and scramble until fully cooked (about 3-5 minutes).
  3. Assemble the wrap: Place the cooked egg and spinach mixture onto the whole grain or spinach wrap. Add diced tomatoes and cheese if using.
  4. Wrap It up: Fold the sides of the wrap in, then roll it up tightly from the bottom to the top.
  5. Serve: Enjoy it as is or lightly toast in the skillet for 1-2 minutes on each side until golden brown.
