Ingredients:
- 2 sweet potatoes cubed
- 2 beetroot cubed
- 100g kale
- 1 can butter beans
- 2 tablespoons harissa paste
- Olive oil salt pepper
Instructions:
- Roast the well seasoned sweet pots and beetroot in olive oil for about 40 mins.
- Add the drained butter beans, kale and stir through the harissa paste .. roast for a further 10 mins…the kale will go sweet and crunchy.
