Roasted sweet potato, beetroot and kale salad

Ingredients:

  • 2 sweet potatoes cubed
  • 2 beetroot cubed
  • 100g kale
  • 1 can butter beans 
  • 2 tablespoons harissa paste 
  • Olive oil salt pepper

Instructions:

  1. Roast the well seasoned sweet pots and beetroot in olive oil for about 40 mins.
  2. Add the drained butter beans, kale and stir through the harissa paste .. roast for a further 10 mins…the kale will go sweet and crunchy.
  3. Enjoy!

  • Preparation time: 10 mins
  • Cooking time: 50 mins

This is so easy and delicious ..full of protein and great as a side or main dish.
