finely cube green pepper, half cucumber and mix all together.
Add to your favourite salad leaves (I use a combo of spinach and rocket)
Cube a butternut squash (or better still buy the cubed squash in a bag) and roast in the oven until golden and soft (add 3 garlic cloves and salt and a bit of olive oil)
Mix leaves and green salad together, sprinkle over roasted butternut, and crumble feta over the top!
