Ingredients:
- 2 boxes tomatoes (cherry)
- 1 whole garlic
- 1 red onion
- thyme
- 500ml Veg stock
Instructions:
- Cut your garlic in half, and with your tomatoes and quartered onion, add to a roasting tin. Drizzle with olive oil, season well and sprinkle with thyme.
- Roast at 180 for about 30 minutes.
- Pop the garlic out of the sleeves, and add all ingredients to your blender. Add 500 mil of veg stock.
- whiz up and serve with a swirl of natural yoghurt!
