Roast tomato and garlic soup

Ingredients:

  • 2 boxes tomatoes (cherry)
  • 1 whole garlic
  • 1 red onion
  • thyme
  • 500ml Veg stock

Instructions:

  1. Cut your garlic in half, and with your tomatoes and quartered onion, add to a roasting tin. Drizzle with olive oil, season well and sprinkle with thyme.
  2. Roast at 180 for about 30 minutes.
  3. Pop the garlic out of the sleeves, and add all ingredients to your blender. Add 500 mil of veg stock.
  4. whiz up and serve with a swirl of natural yoghurt!
