Rach’s Super Quick Quinoa Salad

Cooking time: 10 mins


  • Approx 150g of mixed colour Quinoa( Stays way crunchier than just white)
  • 2 celery sticks
  • 2/3 spring onions
  • 1 Red pepper
  • half lemon
  • large handful coriander

This is so easy and delicious and a great source of protein ..as a side or main dish


  1. Rough chop large handful of Coriander( or not if you don’t like, but it adds amazing flavour+ I add lots!)
  2. Finely chop celery, spring onions and red pepper.
  3. When Quinoa cooked and cooled ( and not before)..toss all of the ingredients together. 
  4. Season+ I add a fresh squeezed Lemon and a good drizzle of good Olive Oil.. Yummy!
