Quick protein bars for afternoon snacks

Preparation time: 10 mins

Cooking time: 20-25 mins (really easy!)


  • 130 g rolled oats
  • 50g desiccated coconut
  • 50g pumpkin seeds
  • 30g sesame seeds
  • 70g chopped nuts eg pistachios and cashews
  • 60g dried cranberries or apricots
  • 1 tsp ground cinamon
  • wet ingredients
  • 3 tbsp olive oil
  • 50g honey (or about 70ml)
  • 1 tsp vanilla extract
  • 50g peanut butter
  • for the drizzle
  • 50 g chocolate melted

Quick, easy and healthy for a protein snack for your afternoon treat, or on the go!


  1. Combine all the dry ingredients together.
  2. heat the wet ingredients in a pan, gently stirring.
  3. Pout the wet ingredients over the dry and combine thoroughly.
  4. Press the mixture into a lined 26 by 16cm baking tray.
  5. Bake in the oven for 20-25 mins at 170c.
  6. Remove from the oven and allow to cool for 10 mins then slice into equal portions.
  7. When cooled, melt the chocolate and and drizzle over the top.
