Protein steak burrito bowl

Ingredients:

  • 250g lean steak of your choice
  • piri piri seasoning (or whatever steak seasoning you like)

salsa..

  • 3 tomatoes chopped
  • 1/2 red onion chopped
  • juice of 1/2 lime
  • tsp of white wine vinegar
  • tsp honey

feta dressing..

  • 150g natural yoghurt
  • 400g feta
  • 1tbsp jalapenos
  • 1 tsp honey
  • 1/2 tsp garlic granules
  • Rice - 1 packet of pre cooked rice
  • 2 spring onions finely sliced
  • handful of coriadner chopped
  • zest of lime and half the remaining juice

To serve - crushed seasoned avocado

  • 2 tbsp black beans (if you like them...if not beans of choice)

Instructions:

  1. Make salsa. Chop tomatoes, onion and add lime juice, vinegar, honey and season.
  2. Make feta dressing. In a blender add all the ingredients ..season to taste. blend until smooth.
  3. Add seasoning to steak and in a hot pan with hot oil, sear the steak for 2-3 mins each side depending how you would like it cooked. Allow to rest.
  4. Meanwhile, cook rice in the microwave, add the spring onion, coriander and zest of the lime, and juice..yum!
  5. Slice your steak.
  6. To serve, load your bowl with the flavoured rice, steak, salsa and drizzle with the feta dressing. Add crushed avocado and clack beans, or beans of your choice.
  7. You can keep in the fridge for up to 3 days...just don't assemble until you're ready to eat it!
  8. Change the steak to any protein choice ..chicken, king prawns, salmon etc

Notes:

  • Preparation time: 15 mins
  • Store for up to 3 days, serves 2.
