Protein packed chickpea salad

Cooking time:


  • 2 /3 large handfuls of cherry tomatoes in half ( I used the yellow ones too.)
  • 3 spring onions
  • small red onion
  • can of 400g chickpeas
  • handful each of coriander and parsley or any herb you love.
  • Dressing
  • 1 large tablespoon of balsamic and 1 tbsp olive oil, season well. 
  • 2 tortilla wraps

You have to try delicious and versatile..add other ingredients if you fancy!


  1. Chop the baby toms in half
  2. finely slice the spring onions
  3. slice the red onion
  4. drain the chickpeas
  5. roughly chop your herbs
  6. combine the dressing ingredients and toss with the salad
  7. Cut up 2 tortilla wraps, drizzle with olive oil salt and pepper and roast at 180 degrees for about 10 mins until crispy and golden. 
  8. Once ready combine the tortillas with the salad
