Ingredients:
- 2 /3 large handfuls of cherry tomatoes in half ( I used the yellow ones too.)
- 3 spring onions
- small red onion
- can of 400g chickpeas
- handful each of coriander and parsley or any herb you love.
- Dressing
- 1 large tablespoon of balsamic and 1 tbsp olive oil, season well.
- 2 tortilla wraps
Instructions:
- Chop the baby toms in half
- finely slice the spring onions
- slice the red onion
- drain the chickpeas
- roughly chop your herbs
- combine the dressing ingredients and toss with the salad
- Cut up 2 tortilla wraps, drizzle with olive oil salt and pepper and roast at 180 degrees for about 10 mins until crispy and golden.
- Once ready combine the tortillas with the salad
