Healthy egg sandwich filling

Ingredients:

  • 2 boiled eggs mashed
  • 1/2 avocado mashed
  • 1 teaspoon dijon mustard
  • squeeze of lemon juice
  • salt, pepper
  • rocket /iceberg lettuce
  • wrap wholegrain

Instructions:

  1. boil eggs for 3 minutes
  2. peel and mash with mustard and avocado
  3. season and add a squeeze of lemon juice
  4. Load into a wrap or pitta add some extra salad and Enjoy!
