Deelish and easy home made pesto pasta

Ingredients:

  • 1 large bunch of basil
  • 1/3 cup of pine nuts
  • 1/3 cup grated parmesan cheese
  • 1 clove of garlic
  • 1/2 juice fresh lemon
  • 1/3 cup olive oil

Instructions:

  1. Toast the pine nuts in a dry frying pan
  2. Add all the ingredients to a blender.
  3. Blitz thoroughly
  4. Make your favourite pasta.
  5. Stir through the sauce adding a little of the pan water, and if you like some creme fraiche.
  6. Add protein, eg flaked salmon chicken.

Notes:

  • Preparation time: 5 mins
  • Store for up to 3 days can be frozen in ice cubes
