Creamy Mushroom Soup

Ingredients

  • 400g sliced mushrooms
  • 1 red onion
  • 2 garlic cloves
  • fresh thyme
  • fresh parsley
  • 1 tablespoon soft cheese
  • 1 litre of chicken stock

Instructions

  1. Add the sliced mushrooms, chopped onion and sliced garlic to a pan with olive oil.
  2. Fry until softened.
  3. Add thyme and chicken stock, season well. Simmer for 20 minutes.
  4. Allow to cool and then add the soft cheese and blend it all.
  5. Add some chopped parsley and serve. Enjoy!
