Ingredients

  • 150g couscous (uncooked)
  • 300ml water or vegetable stock
  • 75g feta cheese, crumbled
  • 40g black olives, pitted and sliced
  • 40g fresh parsley, chopped (optional)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Lemon wedge to garnish

Instructions

  1. Cook the couscous: In a medium saucepan, bring the water or stock to a boil. Add the couscous, stir, cover, and remove from the heat. Let it sit for about 5 minutes until the couscous absorbs the liquid. Then fluff the couscous with a fork.
  2. Mix the ingredients: In a large bowl, combine the fluffed couscous, feta cheese, black olives, and parsley (if using).
  3. Drizzle with olive oil and lemon juice. Season with salt and pepper to taste. Mix well.
  4. Serve: Serve warm or at room temperature with a wedge of lemon.
