Courgette, red pepper and feta frittata

Preparation time: 10 mins

Cooking time: 25 mins


  • Half courgette grated (finely slice the other half and keep to put on top later.. or if you can’t be bothered grate it all)
  • 1 red onion finely diced
  • 2 spring onion finely sliced 
  • 5 eggs whisked
  • 50g crumbled feta
  • 3 tablespoons (50g SR flour)
  • Lots of seasoning!
  • grated mature cheese to top

Try this quick, easy and protein packed grab and go lunch idea


  1. Mix together all of the ingredients and season well.
  2. Either make one large frittata or separate muffins like I did.. if you don’t have a non stick tray use baking paper.  
  3. Put the finely sliced 1/2 courgette on top and sprinkle with a good handful of grated mature cheese.
  4. Put it in oven at 180 for about 25 mins until golden and risen… firm to touch.
  5. Can be eaten hot/cold ..enjoy!
