Courgette, pea and feta soup

  • 6 courgettes cubed
  • 1 whole garlic (cloves peeled and separated)
  • 500g frozen peas
  • 50g basil leaves
  • 1 L Veg stock
  • 200g feta crumbled
  • finely grated lemon
  • salt and pepper

This is so delicious and fresh! It makes a big batch so you can freeze if needed.


  1. In a large saucepan add olive oil. medium heat. Cook the whole garlic cloves until golden.2-3 mins
  2. Add the cubed courgettes, season. Fry or 3 mins.
  3. Add stock plus 500ml water and bring to the boil for about 7 mins.
  4. Add the peas and basil for 1 minute. Then remove and blend.
  5. To serve crumble over the feta, grate lemon and add pepper.
