Ingredients
- 6 courgettes cubed
- 1 whole garlic (cloves peeled and separated)
- 500g frozen peas
- 50g basil leaves
- 1 L Veg stock
- 200g feta crumbled
- finely grated lemon
- salt and pepper
Instructions
- In a large saucepan add olive oil. medium heat. Cook the whole garlic cloves until golden.2-3 mins
- Add the cubed courgettes, season. Fry or 3 mins.
- Add stock plus 500ml water and bring to the boil for about 7 mins.
- Add the peas and basil for 1 minute. Then remove and blend.
- To serve crumble over the feta, grate lemon and add pepper.
