Chicken and sundried tomato burger with sweet potato wedges

Ingredients to feed 4

  • 1 pack of chicken eat well chipoloatas (M&S)
  • 8 sundried tomatos diced
  • handful of fresh basil chopped
  • 100g thick natural yoghurt
  • 1/4 tsp garlic granules
  • 1/2 tsp honey
  • M&S high protein bread rolls
  • little gem lettuce
  • large tomato
  • feta cheese
  • 500g sweet potatoes in wedges
  • M&S roast potato seasoning
  • slaw (pre made )


These are quick, easy and great for a protein teenage dinner..everyone will love. I found these on instagram and I've made them loads of times since. My boys love them!

Directions

  1. Cut the sweet potatoes into wedges, drizzle with olive oil, season and sprinkle with roast potato seasoning. Roast for 25-30 minutes.
  2. De- skin the sausages and empty the meat into a bowl, add the diced sundried tomatoes and chopped basil.
  3. Make into 4 evenly sized burgers.
  4. Mix the yoghurt with the garlic granules (or grated garlic) season.
  5. Fry off the chicken burgers (about 3 minutes on each side) until cooked through.
  6. Quickly toast the buns.
  7. Put together, with the garlic yoghurt spread onto the bun. Add shredded lettuce and a slice of tomato. Add the burger.
  8. Add the sweet potato werdges to the plate, and some ready made coleslaw (I love the apple and beetroot from M & S)
