Roasted butternut and feta salad

Ingredients:

  • 3 spring onions
  • 3 sticks of celery
  • 1 green pepper
  • half cucumber
  • 1bag of spinach
  • 1 bag of rocket
  • 1 bag of cubed butternut squash or 1 whole
  • 3 cloves of garlic
  • feta cheese

Instructions:

  1. Finely slice spring onions, celery,
  2. finely cube green pepper, half cucumber and mix all together.
  3. Add to your favourite salad leaves (I use a combo of spinach and rocket) 
  4. Cube a butternut squash (or better still buy the cubed squash in a bag) and roast in the oven until golden and soft (add 3 garlic cloves and salt and a bit of olive oil) 
  5. Mix leaves and green salad together, sprinkle over roasted butternut, and crumble feta over the top!

  • Preparation time: 10 mins
  • Cooking time: 30 mins
