Ingredients:
- 3 spring onions
- 3 sticks of celery
- 1 green pepper
- half cucumber
- 1bag of spinach
- 1 bag of rocket
- 1 bag of cubed butternut squash or 1 whole
- 3 cloves of garlic
- feta cheese
Instructions:
- Finely slice spring onions, celery,
- finely cube green pepper, half cucumber and mix all together.
- Add to your favourite salad leaves (I use a combo of spinach and rocket)
- Cube a butternut squash (or better still buy the cubed squash in a bag) and roast in the oven until golden and soft (add 3 garlic cloves and salt and a bit of olive oil)
- Mix leaves and green salad together, sprinkle over roasted butternut, and crumble feta over the top!
