Creamy green soup

Ingredients:

  • 3 cloves of garlic sliced
  • 2 chopped large leeks 
  • Season 
  • Sauté until softened in olive oil add a teaspoon of curry powder (more if you like heat) 
  • Add 2 sliced courgettes
  • Head of 1 broccoli 
  • And 1 litre veg stock.

Instructions:

  1. Simmer ingredients for 20 minutes and then blend.

Cooking time:

  • Preparation time: 10 mins
  • Cooking time: 25 mins

Notes:

  • Top with some natural yoghurt and roasted chickpeas ..I like to roast chickpeas with smoked paprika and they give you some extra protein .. or grate some Parmesan over.
  • Love this served with some crusty sourdough.
