Ingredients:
- 3 cloves of garlic sliced
- 2 chopped large leeks
- Season
- Sauté until softened in olive oil add a teaspoon of curry powder (more if you like heat)
- Add 2 sliced courgettes
- Head of 1 broccoli
- And 1 litre veg stock.
Instructions:
- Simmer ingredients for 20 minutes and then blend.

- Preparation time: 10 mins
- Cooking time: 25 mins
Notes:
- Top with some natural yoghurt and roasted chickpeas ..I like to roast chickpeas with smoked paprika and they give you some extra protein .. or grate some Parmesan over.
- Love this served with some crusty sourdough.
