Ingredients:
- Approx 150g of mixed colour Quinoa( Stays way crunchier than just white)
- 2 celery sticks
- 2/3 spring onions
- 1 Red pepper
- half lemon
- large handful coriander
Instructions:
- Rough chop large handful of Coriander( or not if you don’t like, but it adds amazing flavour+ I add lots!)
- Finely chop celery, spring onions and red pepper.
- When Quinoa cooked and cooled ( and not before)..toss all of the ingredients together.
- Season+ I add a fresh squeezed Lemon and a good drizzle of good Olive Oil.. Yummy!
