Ingredients:
- Half courgette grated (finely slice the other half and keep to put on top later.. or if you can’t be bothered grate it all)
- 1 red onion finely diced
- 2 spring onion finely sliced
- 5 eggs whisked
- 50g crumbled feta
- 3 tablespoons (50g SR flour)
- Lots of seasoning!
- grated mature cheese to top
Instructions:
- Mix together all of the ingredients and season well.
- Either make one large frittata or separate muffins like I did.. if you don’t have a non stick tray use baking paper.
- Put the finely sliced 1/2 courgette on top and sprinkle with a good handful of grated mature cheese.
- Put it in oven at 180 for about 25 mins until golden and risen… firm to touch.
- Can be eaten hot/cold ..enjoy!
