Lunchtime bruschetta with protein

Ingredients:

  • 100g cherry tomatoes
  • 2 tbsp basil leaves
  • 1 tbsp finely chopped red onion
  • 1 tsp red wine vinegar
  • 1 tsp olive oil
  • 1 large slice sourdough
  • 3 tbsp cottage cheese

Instructions:

  1. Place tomatoes, basil, red onion in a bowl and add the red wine vinegar and olive oil. Mix.
  2. Toast sourdough
  3. Spread the cottage cheese onto your toast, top with brushetta mix.
  4. Eat and enjoy straight away..the perfect lunch!
