Ingredients:
- 1 can tuna
- 1 tablespoon natural yoghurt
- 1 teaspoon dijon mustard
- 1/3 cucumber finely diced
- 1 celery finely diced
- 1 spring onion finely sliced
- 1 pickled onion sliced
- herbs if you have them eg chives
- 3 crackers (I used ryvita..could use rice cakes)
- 1/2 smashed avocado (optional)
Instructions:
- Add all the ingredients together except the avo.
- Smash the avocado and spread on the crackers.
- Load up the crackers with the tuna mix.
- Optional ..sprinkle with herbs.
- Enjoy

I often make double as this is so tasty to dip into for afternoon snacks ..store in an airtight container for up to 3 days.
