Ingredients:
- 130 g rolled oats
- 50g desiccated coconut
- 50g pumpkin seeds
- 30g sesame seeds
- 70g chopped nuts eg pistachios and cashews
- 60g dried cranberries or apricots
- 1 tsp ground cinamon
- wet ingredients
- 3 tbsp olive oil
- 50g honey (or about 70ml)
- 1 tsp vanilla extract
- 50g peanut butter
- for the drizzle
- 50 g chocolate melted
Instructions:
- Combine all the dry ingredients together.
- heat the wet ingredients in a pan, gently stirring.
- Pout the wet ingredients over the dry and combine thoroughly.
- Press the mixture into a lined 26 by 16cm baking tray.
- Bake in the oven for 20-25 mins at 170c.
- Remove from the oven and allow to cool for 10 mins then slice into equal portions.
- When cooled, melt the chocolate and and drizzle over the top.
- Enjoy.
