- 3 large eggs (or 2 eggs + 2 egg whites for a lighter option)
- 1/4 cup diced tomatoes
- 2 tbsp chopped fresh basil
- 2 tbsp crumbled Greek feta cheese
- 1 tbsp grated Parmesan cheese
- 1 tbsp sliced black olives
- Salt and pepper to taste
- 1 tsp olive oil or cooking spray
Instructions
- Whisk the eggs (and egg whites, if using) in a bowl and season with salt and pepper.
- Cook the omelette: Heat a non-stick skillet over medium heat and add the olive oil or cooking spray. Pour in the egg mixture and let it cook for about 1-2 minutes, just until the edges start to set.
- Add Toppings: Sprinkle the tomatoes, basil, Greek cheese, Parmesan, and olives evenly over one half of the omelette. Let it cook for another 2-3 minutes until the eggs are almost fully set.
- Fold the omelette in half and cook for an additional minute until the cheese melts slightly.
- Transfer to a plate and enjoy warm.
