Greek Omelette

Ingredients

  • 3 large eggs (or 2 eggs + 2 egg whites for a lighter option)
  • 1/4 cup diced tomatoes
  • 2 tbsp chopped fresh basil
  • 2 tbsp crumbled Greek feta cheese
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp sliced black olives
  • Salt and pepper to taste
  • 1 tsp olive oil or cooking spray

Instructions

  1. Whisk the eggs (and egg whites, if using) in a bowl and season with salt and pepper.
  2. Cook the omelette: Heat a non-stick skillet over medium heat and add the olive oil or cooking spray. Pour in the egg mixture and let it cook for about 1-2 minutes, just until the edges start to set.
  3. Add Toppings: Sprinkle the tomatoes, basil, Greek cheese, Parmesan, and olives evenly over one half of the omelette. Let it cook for another 2-3 minutes until the eggs are almost fully set.
  4. Fold the omelette in half and cook for an additional minute until the cheese melts slightly.
  5. Transfer to a plate and enjoy warm.
