- 60ml honey or maple syrup
- 60ml coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp salt
Ingredients for the bowl
- 240ml Greek yogurt (or dairy-free alternative)
- 120g raspberries (fresh or frozen)
- 1 medium kiwi, peeled and sliced
- Granola (as prepared above)
Instructions
- Make the Granola: Preheat the oven to 350°F (175°C).
- In a large bowl, mix rolled oats, cinnamon and salt.
- In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
- Pour the wet ingredients over the dry ingredients and mix until well combined.
- Spread the mixture evenly on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes, stirring halfway through, until golden brown. Let it cool completely.
- Assemble the Bowl. In a bowl, add 1 cup of yogurt.
- Top with granola, raspberries, and kiwi slices.
- Drizzle with a little honey or maple syrup if desired.
