Ingredients for the Granola

  • 180g rolled oats
  • 60ml honey or maple syrup
  • 60ml coconut oil (melted)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Ingredients for the bowl

  • 240ml Greek yogurt (or dairy-free alternative)
  • 120g raspberries (fresh or frozen)
  • 1 medium kiwi, peeled and sliced
  • Granola (as prepared above)

Instructions

  1. Make the Granola: Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix rolled oats, cinnamon and salt.
  3. In a separate bowl, whisk together honey (or maple syrup), melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients over the dry ingredients and mix until well combined.
  5. Spread the mixture evenly on a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until golden brown. Let it cool completely.
  7. Assemble the Bowl. In a bowl, add 1 cup of yogurt.
  8. Top with granola, raspberries, and kiwi slices.
  9. Drizzle with a little honey or maple syrup if desired.
